This type of wine is bottled exclusively in early spring, and the increase in temperature encourages a slow fermentation in the bottle, which can last up to a few months. After the refermentation process, the yeast is deposited on the bottom of the bottle, thus creating the characteristic “fondo” or “sediment”.
